Bright Green Breakfast
Yesterday my breakfast, which started out as a simple fried egg, turned into something completely different. I ended up grilling some onions with the egg and adding a handful of fresh spinach leaves. Sunday Brunch
I worked this morning and brought home a sesame seed bagel. I scrambled an egg with a little basil, kosher salt and garlic pepper. When the egg was almost done I tossed in a little fresh grated parmesan cheese. I toasted the bagel and made a sandwich with the egg. On the side I had a few black cherries and a big glass of ice water.
I had it eaten before I remembered to take a photo!
Summer Snack Time
I love snacks. Today I covered a little plate with sesame/poppy seed crackers. On about half of them I put fresh baby spinach leaves and small slices of swiss cheese. On the rest of the crackers I spread Kaukauna and added a little chopped asparagus. I also couldn’t resist a celery stick filled with peanut butter and topped with a few mixed nuts. Green Lunch
Half of a sliced avocado on whole wheat bread, a little lemon juice, basil, salt and swiss cheese. Yummmy.
