Vegan Lasagna. Vegetarian Lasagna.
For Meatless Monday I tried my hand at some Lasagna, inspired from a photo that caught my eye in last summer’s issue of Vegetarian Times.  Myth: Lasagna noodles need to be, or even should be, cooked before you put them together and bake it in the oven. Fact: Lasagna noodles can be put, uncooked, into the lasagna and come out tasting and textur-ing the exact same way.(or maybe even better...

Thyme Is On My Side... yes it is.
My friend called just in thyme to tell me that adding thyme to my tofu meal would be a good idear. I’m all about taking risks in the kitchen so I threw some in and let me tell ya, it didn’t fail me.  I sautéed some vegetables I had left over from my Meatless Monday pizza, which were red onion, asparagus and tomatoes. I added a few mushrooms and some spinach too. I let the vegetables...

Pita Heaven.
I was there. Black beans. Rice. Peas. Spinach. Onion. Garlic hummus. All of this business stuffed inside of a warm, whole-wheat pita bread.

Bright Green Breakfast
Yesterday my breakfast, which started out as a simple fried egg, turned into something completely different. I ended up grilling some onions with the egg and adding a handful of fresh spinach leaves. I toasted some whole grain bread and then put the egg, onion, and spinach concoction in between the slices along with some fresh avocado and a little bit of mustard (for those people who dislike...

The French Press
“The easiest way to the best cup is by using a French Press. Add water just off the boil to fresh, coarsely ground coffee (keep in mind correct brew ratio). Wait four minutes and then press. Taste and decide if grind was at the right coarseness, and, if necessary, make adjustments accordingly.” (www.novocoffee.com)

Sunday Brunch
I worked this morning and brought home a sesame seed bagel. I scrambled an egg with a little basil, kosher salt and garlic pepper. When the egg was almost done I tossed in a little fresh grated parmesan cheese. I toasted the bagel and made a sandwich with the egg. On the side I had a few black cherries and a big glass of ice water. I had it eaten before I remembered to take a photo!

Summer Snack Time
I love snacks. Today I covered a little plate with sesame/poppy seed crackers. On about half of them I put fresh baby spinach leaves and small slices of swiss cheese. On the rest of the crackers I spread Kaukauna and added a little chopped asparagus. I also couldn’t resist a celery stick filled with peanut butter and topped with a few mixed nuts. My plate looked really green so I also added...

Green Lunch
Half of a sliced avocado on whole wheat bread, a little lemon juice, basil, salt and swiss cheese. Yummmy.  I laid some asparagus on a pan with a little chopped onion, olive oil and crushed black pepper and garlic. I put it on the broiler for a few. (note: if you want to keep your asparagus fresher longer keep them bundled together and place them upright in a small bowl of water in the fridge) I...
