Bright Green Breakfast
Yesterday my breakfast, which started out as a simple fried egg, turned into something completely different. I ended up grilling some onions with the egg and adding a handful of fresh spinach leaves. I toasted some whole grain bread and then put the egg, onion, and spinach concoction in between the slices along with some fresh avocado and a little bit of mustard (for those people who dislike mustard, this could easily be replaced with balsamic vinegar which I think would also be delicious)
