Butternut Squash Pizza
Consisted of pizza dough that I drizzled with a little olive oil, shook on a few herbs of choice (oregano, basil, thyme and fresh rosemary) and topped with slices of fresh butternut squash, green pepper, onion, garlic and spinach. We didn’t de-veganize it until we grated on a little bit of extra sharp cheddar, which could easily be left out. Don’t forget that spinach is a delicate green and tends to go bad quicker than other vegetables. For this reason, I used the rest for a side salad with pepperoncinis.
