Thyme Is On My Side… yes it is.
My friend called just in thyme to tell me that adding thyme to my tofu meal would be a good idear. I’m all about taking risks in the kitchen so I threw some in and let me tell ya, it didn’t fail me.
I sautéed some vegetables I had left over from my Meatless Monday pizza, which were red onion, asparagus and tomatoes. I added a few mushrooms and some spinach too. I let the vegetables cook in a small amount of olive oil (a little bit really goes a long way) while I “scrambled” the tofu, which just means pouring out the water and mixing it up with a fork. I added the tofu, thyme and a little salt and peppah.
On the side I mixed up some guacamole with an avocado, salsa, garlic powder and cumin.
All of this on two slices of toasted 9 Grain bread and I had my breakfa… Brunch.
Depending on how you like your tofu depends on how long you should cook it and unlike eggs you can eat it raw with no worries. You can also choose the firmness you prefer, if the store’s got it.
