…and BOY do I love them!
I mixed this one with a little fresh tomato, onion, chives and lemon juice. That was the salsa? for my non-traditional fajitas. I sautéd some onion and threw on my favorite mexican spice blend and then added yellow summer squash and broccoli. Yep, I said it. Broccoli. I finished by wrapping all of that business up in a Grand Rapids-made tortilla with beans and rice. A vegan meal success!
p.s. I just added “vegan” to my computer’s vocabulary.
